Cherry, raspberry and real structure
Deep pink from the saignée. Cherry, raspberry and stewed blackcurrant, with a touch of cranberry and a savoury, toasty note from its time on the lees. Powerful and dry, with racy acidity and real structure. Long finish.

Pinot Noir and Meunier, pink from the skins
Rosé ! is made from Pinot Noir and Meunier, with Pinot Noir in the lead.
The colour comes from saignée: the black grapes sit on their skins until the juice turns pink, then it is drawn off. That is why it is darker and fruitier than most rosé Champagne.
Pink from the skins, nothing added

Fabian Daviaux
Chavost is the old name of Chavot-Courcourt, a village just south of Épernay. Local growers set up their cooperative here in 1946. For decades it made Champagne for its members and sold grapes to the big houses, until it ran into trouble in the 2010s.
In 2019 the growers called Fabian Daviaux, a winemaker's son from the village, to run it. He said yes on his terms: organic farming, no sulphites from start to finish, no reserve wines, short ageing and no sugar added at the end. His brother draws the labels, cartoons of the cooperative and its members.
How to serve and pair it
Some pairing ideas
- Roast duck breastRed fruit and enough grip for rich meat
- Salmon tartarePink with pink, the acidity cuts the fat
- Jamón and saucissonSalt and fat, refreshed by the bubbles
- Beetroot and goat's cheeseEarthy and sweet against a bone-dry finish
If you like this one, try...

Chavost again, all Meunier. Made from black grapes but pressed white, so you get the same cellar without the colour.

Pinot Noir, one of the two grapes in Rosé !, as a light red from Alsace. Biodynamic, no added sulphites.

A rosé from South Moravia, foot-crushed and aged in acacia barrels. More texture than most rosés, and no fizz.
