Zelen is a rare indigenous white variety from the Vipava Valley. Fedora vinifies it the traditional way – spontaneous fermentation with 4 to 6 days of maceration, then 12 to 16 months on lees in large oak. Organic, unfiltered.

Zelen features:

• 100% Zelen; indigenous to the Vipava Valley, Slovenia; organic.
• 4–6 days maceration; 12–16 months on lees in large oak; unfiltered.
• Mediterranean herbs, dried apricot and minerality; full-bodied and oily.
