Pithari White 2025 by Afianes Wines.
A natural dry white from pre-phylloxera Begleri vines over 100 years old, grown at about 800 m in Patissa and Raches on granite soil. The grapes are destemmed by hand, foot-pressed in a granite press and fermented in clay jars, called pithari, buried in the earth outside the winery.
Pithari White features:
- 100% Begleri, PGI Ikaria, from a 2 hectare organically farmed vineyard.
- The must stays on the skins for 3 to 5 days, then ferments on indigenous yeasts in the buried pithari. No mechanical intervention and no filtration.
- Cloudy, bright gold. Smoke, grapefruit, earth, wet granite and mushroom on the nose; wild herbs, tobacco and citrus on the palate, with a wet granite finish.
- Made for long ageing. 1,300 bottles produced.
- Serve at 10 to 12°C. Afianes suggests shellfish, oysters and clams, grilled fish, smoked cheeses and camembert, or wild vegetables with lemon.
- 75cl.
- 11% ABV.
