In the glass

Pear, lemon zest and a salty edge

Pale straw with a fine, lively mousse. Ripe pear, fresh apple and lemon zest, with a little pastry and chalk underneath and a subtle salty touch. Bone dry and precise, with enough roundness to balance the tension. Long, straight finish.

Chardonnay and Meunier, from five harvests

Paradoxe is 60% Chardonnay and 40% Meunier. Instead of one vintage, it brings together all of the cooperative's reserve wines from 2019 to 2023.

The reserves were kept in barrels and large foudres before the blend was bottled in 2024, in 75 cl bottles and in magnums.

The grower

Fabian Daviaux

Chavost is the old name of Chavot-Courcourt, a village just south of Épernay. Local growers set up their cooperative here in 1946. For decades it made Champagne for its members and sold grapes to the big houses, until it ran into trouble in the 2010s.

In 2019 the growers called Fabian Daviaux, a winemaker's son from the village, to run it. He said yes on his terms: organic farming, no sulphites from start to finish, no reserve wines, short ageing and no sugar added at the end. His brother draws the labels, cartoons of the cooperative and its members.
