Smoked Chili Flakes

Smoked Chili Flakes by Daphnis and Chloe.

Known as Boukovo in Northern Greece, these chili flakes are made from Almopian peppers slow-dried over birch wood for ten days – with farmers working in shifts to keep the fire going throughout. The result is a smoky, sweet and mellow spice with rich colour and a lasting flavour.
