Conserverie Sillon is an artisanal cannery in Toulouse, and this is the recipe they treat as the baseline: a rustic chop of good pork with sober, accurate seasoning. Soft in the mouth, with a point of garlic and pepper and nothing overplayed.

Pâté de Campagne features:

• Coarsely chopped French pork with garlic and pepper.
• Straightforward country-style seasoning with no elaboration.
• Serve cold or at room temperature on country bread, with pickles or a strong mustard.
