Ruvido – Spark

Spark by Ruvido.

Ruvido is an independent bean-to-bar project started in February 2025 by Mattia Intorre and Giulia Mandalà, produced in the province of Milan. Spark is made from 2024 cacao from Bejofo Estate in the Sambirano Valley of northwestern Madagascar, founded in 1924 and one of only two historic plantations on the island, where cacao grows under an agroforestry canopy shared with Albizia, Madagascar almond, banana, jackfruit and citrus.

Spark features:

• Two ingredients only: 75% single-origin cocoa beans and cane sugar, with no added cocoa butter.
• Madagascar Bejofo, 2024 harvest, Trinitario and Criollo beans recognised as Heirloom Cacao by the Heirloom Cacao Preservation Fund.
• Tasting notes of mandarin and cashew.
• Rough texture from refining for under 12 hours, around half the usual industry time. 50g resealable pack.
