Ruvido – Scarlett

Scarlett by Ruvido.

Ruvido is an independent bean-to-bar project started in February 2025 by Mattia Intorre and Giulia Mandalà, produced in the province of Milan. Scarlett is made from 2026 cacao grown on the volcanic foothills of the Rwenzori mountain range in Uganda, where more than 5000 smallholder farmers work plots of half an acre to three acres, supported by Latitude Trade with premiums of 10 to 30% above local market rates and training in organic agronomy.

Scarlett features:

• Two ingredients only: 75% single-origin cocoa beans and cane sugar, with no added cocoa butter.
• Uganda Bukonzo, 2026 harvest, Trinitario hybrids, seven days of centralised fermentation and open sun drying on raised beds.
• Tasting notes of black cherry and custard.
• Rough texture from refining for under 12 hours, around half the usual industry time. 50g resealable pack.
