Sprattus sprattus caught from small boats in the Baltic Sea through the winter months, then smoked over native black alder wood following a recipe from Riga that is over a century old. Sprats are not a fish you would find at a Luxembourg market, but a staple of the Baltic coast, where cold winters and slow wood smoke turn a small, oily fish into a pantry keeper.

Smoked Sprats features:

• Sprattus sprattus (sprat), wild-caught in the Baltic Sea over winter
• Smoked over 100% black alder wood, following a Riga recipe over a century old
