Sardina pilchardus, hand-packed in Cambados, Galicia, then left to mature in olive oil for around 40 months before release. The long ageing is the point: it softens the fish and lets the oil pick up a floral character, giving a firmer, less fatty sardine than the tins sold straight from the catch.
