Filotea – Lasagne

Made in Ancona, Le Marche, using bronze dies and slow drying to produce egg pasta sheets with good structure, bite and flavour. Filotea draws on the Marche tradition of fine egg pasta for a sheet that holds its shape in both baked and free-form preparations.
