Chilli Chan's is an Amsterdam kitchen built around Taiwanese home cooking. Their take on XO sauce leaves out the dried seafood entirely and builds the same smoky depth from dried hedgehog mushrooms, fermented soybean, ginger and fresh chilli, served over thick knife-cut noodles. The recipe is a Great Taste Award winner.
