Chilli Chan's is an Amsterdam kitchen built around Taiwanese home cooking. This is their hottest bowl, built on the Sichuan pairing of ma and la: the tingling numbness of Sichuan peppercorn against the heat of fermented chilli, carried by thick hand-folded noodles.
