Colatura di Alici Riserva by Armatore.
Known as the gold of Cetara, colatura descends from the ancient Roman garum. Anchovies caught along the Amalfi Coast in spring are layered with sea salt in chestnut barrels and left to mature for 18 to 30 months, yielding an amber liquid drawn off as this concentrated condiment.
