Pata Negra from 100% Iberian pigs raised on acorns in the Dehesa – hand-sliced by a Master Slicer and cured for 44 to 48 months in natural cellars. Tyrosine crystals are visible on the slices, a sign of extended curing. Sweet, hazelnut-noted and intensely flavoured from the first bite.
